Max torque is where the engine is maximizing the amount of air drawn into each cylinder ( pushed for the turbos) for each revolution; more air means more fuel can be burned, which means more torque. This efficiency falls off after the max. torque speed (the amount of torque the engine produces is less) but the increase in engine speed is faster than the drop in torque. This gives you an increase in horsepower for about another 1500-2000 rpm (non-turbo enignes) until the max. power is reached. That is the point where the increase in engine speed no longer exceeds or matches the drop in torque.
For maximum acceleration, stay between the max torque and max. power point. For maximum fuel economy, use the highest gear that keeps the engine from bogging down.
