Bryan,
You really need to get the Bentley's manual. It will show how the car works and what it needs. Your car has a closed-loop mechanical fuel injections system first designed for the 914 in 1971(correctly me if I'm wrong here!).
For the vacuum leak you should get a Mity-Vac vacuum tester. You take the hoses off the intake and test the hose and diaphram on the end of the hose.
My hoses were good but my chacoal canister diagram was bad.
The CIS needs to regulate the fuel pressure accurately to run smoothly. The best/only way to test this is to get a CIS fuel pressure tester from JCWhitney. There are many components that regulate the fuel pressure to correct for various driving conditions.
Then of course there are the electrical concerns. If the car starts cold and idles fine then starts to stall I bet its electrical. Dist. cap & wires original? When the CIS warms up the O2 sensor also comes on line but I doubt it will stall the car, maybe too lean, but how lean can it get the car?
Hope this helps,
If you have any cold start problems I have been there, never any warm running conditions.
