That's absolutely ridiculous. An O2 sensor can be had for about $50 for any number of Saab sponsors. A dealer would be forced to use the Saab part instead of the generic Bosch part, bumping the price up to about $170. On a 900, replacing the O2 is somewhat difficult as the car must be up in the air (unless it's a turbo, then it's easy), but it does not take more than 30 minutes to an hour to do it. The *most* you could be talking about would be $250 - part plus labor, and it should be less.
Beyond that, if you are getting exhaust smells in the car, your problem could very well be an exhaust leak at the exhaust manifold or at one of the couplers. This would allow exhaust to escape, and air to get in the system which could give the O2 sensor a false "lean" condition, making it run rich. For $100 it *should* cost to replace the O2 sensor (not $500!) it's worth trying just for the heck of it, but at $500 they darned well better guarantee they'll fix both problems (running issues and exhaust leak) the first time...
Personally, I'd take it somewhere else. If you post what area you're in, I'm sure people on the BBS can recommend a good independant shop that won't take you to the cleaners.
