If you want to be careful and easy with the new parts, go to the local machine shop, throw the machinist five bucks and ask if you can borrow his 12 ton hydraulic press. The press puts nice even pressure on the diaphragm spring and whatever you're using to hold the spring down slides right in.
Like chrisx, I compressed about half of the OLD pressure plate diaphragm spring to get the old parts out with failed hydraulics. I used a Crescent wrench which has a round side and a flat side. I put the round side up against the primary chain case, pulled the handle towards the pressure plate and let the flat part depress three spring fingers at a time. I have the official tool and just fed it in until I had enough compressed to pull the assembly as a unit.
