Always helps to know what kind of car you have.
The throttle dashpot may be out of adjustment. The dashpot keeps the throttle from closing too quickly to reduce exhaust emissions. It's easy to spot... cylindrical device bolted to the intake manifold with no wires or hoses going to it that gets "hit" by the throttle as it closes. Have someone press and release the accelerator while looking at the throttle mechanism and you will see how it operates. Very easy to adjust.
