With a helper, you can do it in 3-4 hours if you don't run into any frozen nuts. Get car up on tall and solid jackstands and remove wheels. Count the turns needed to take the tie rod ends off, so that you can approximate alignment on install. Unbolt the rack from the crossmember before you remove the ujoint and rack fittings. Get stubby 16mm and 18mm wrenches for the line to rack fittings. Unbolt the steering u-joint from inside the car. When the ujoint is off the spindle, wiggle the ujoint around to make sure it isn't binding. If the ujoint is stiff you can try to loosen it up with wd-40 or just replace. Find a good used one, new are >$300.

Having a helper will make removal of the rack much easier because the rack hangs up on the body when you flip it over and slide it all the way to the right to clear the left side, and then lower it.

Oh, did I say it was a dirty job. Be sure to degrease to make job more pleasant and to keep things clean when you reinstall. Avoid getting dirt in the new system, because a little bit can clog up the rack. Lastly, if the used hoses don't leak and are not all spongy from P/S seal sweller, they should be OK. Have fun, it's a satisfying job when you're done.
