Always run 50-50 water to coolant (from the bottle). For best results, use distilled water, not tap water, as tap water can have more minerals and other chemicals (e.g. chlorine, florine, etc.)
If you deviate from 50-50, it actually increases the freezing point (bad-you want a low freezing point), and can speed corrosion. So 'more' isn't better.
Most good name brand antifreezes will work just fine - Prestone, Texaco, the usual. Stay away from house brand/no-name antifreeze. Townsend recommends running Mercedes coolant, as they claim it reduces cooling system problems. If you do go to a different coolant, it's best to completely flush the system first.
Mercedes coolant may help cooling systems live longer, but the MOST important part is to flush the cooling system every two years. I'll bet that if you use a good brand-name antifreeze and flush every two years, that will be just as good as running Merc coolant. Replace the thermostat during the flush - thermostats are moving parts, and they wear out.
