I assume that by a jubilee clip, you mean a basically round clip with a 'pinch point'.
The clips I've used are a round metal band with an opening. At one end of the opening are two little indents, and at the mating end are two little 'outdents'. This allows you to open up the clamp and pass it over the driveshaft. Part way 'round the metal ring it bumps up for a half inch or so.
Install the boot(gaiter) packed with grease. You then put the clamp around the boot in the groove right by the wheel hub. Slide the open ends towards each other until the little indents and outdents clip into each other. This is simply said but a trick to do - usually there is a little grease on your hands and some on the clamp, and squeezing it like that is hard. But it is doable.
Next, with the teeth interlocked, you need to squeeze down the clamp. You do this by pinching the sides of that little bump out - it looks like a ___\----/____ , except the top part is higher. Pinch at the bottom, and that tightens the clamp.
There are special tools for pinching. What I use is a set of cutters - not diagonal cutters, but the kind that look like a pincer. I have a nice cheap set I picked up for a couple of bucks at the bargain store, and I blunted the cutting surfaces. If you have a sharp one, just protect the clamp with a little cloth or tape.
