It'll vary considerably, main factors being the age and condition of the coil, leads, cap and rotor. If the system is good, you can expect 20-30kV. The spark should jump over 1/2" in free air.
It's amazing how cars will still run even with a poor ignition system, putting out less than 5kV. All that's required to jump the plug gap is around 3-4 kV. But a higher voltage gives a hotter, more consistent spark, and better ignition.
Under boost conditions, you need a higher voltage to jump the gap, which is why a good ignition system is particularly important in turbo cars.
