Going to a cooler fan switch (82C) but keeping the stock thermostat (87-89) makes no sense. The engine will run just as hot, all it means is that the coolant in the radiator is cooler. Big deal - the radiator temperature isn't what affects your head warping. The temperature gauge reads the engine temp, and that's affected by the thermostat.
Replace the thermostat with 82 -you're engine will thank you for it. Frankly, I would do an engine flush, replace both thermostat and thermoswitch with the cooler ones, and then see where you are at. You're thinking too far ahead with radiator replacements and bad water pumps - If you hear hoofbeats, don't think Zebras when horses will do. Most of the time cooling issues are old, stuck thermostats and radiators that could use a flush.
The normal sign of a bad water pump is a leak from the weephole. Waterpumps fail when the seals go. Waterpumps almost never fail by becoming less efficient. The only other failure mode than a leaking seal is for the impellor to break off (very rare), and that results in complete flow stoppage and high temps.
Do the standard maintenance first, and then see if you have a problem.
