The Joann Fabric stores down here (Atlanta) didn't have too much. Mostly black and other dark colors. Some people like the cavelike feel, but I wanted something lighter.
Here's a link to the company that supplied my headliner fabric. The color that I got was 1747 - Quicksilver. It's a little on the grey side, but not too dark. It's definitely lighter than the falling-down headliner fabric that was exposed to 11 years of road dust :-)
I think that the closest match to the real SAAB color is one of the "Off White" fabrics, but I don't remember which one it is. The way I found out was when I removed one of the C-pillar panels and saw how much lighter the fabric that had never seen flowing air or sun was. Oh well.
The prices on this site are pretty good. I got stung $10/yard from a local fabric shop for the 6 yards I got. Same stuff. You might just be able to get away with 5 yards and have enough to do the sunroof. Maybe just - There were about 2 feet on the end of the roll that were too wrinkled to be of much use.
