since ac uses both fans, and t-stat is new, bad rad is likely.
1) pressure test system, tiny leak can cause trouble.
2) check t-stat and gage ... cold start and let idle. gage rises to 40% green (low temp t-stat) and then hangs there a while. when all rad coolant hot, gage rises to 2/3 with oem fan switch.
If gages rises near red before fan comes on, this implies bad rad (or t-stat). verify by putting drop of water on metal spool in upper hose when fan first turns on ... if it boils, then rad is clogged. $130 for alum/plastic replacement.
while at it, remove fan relay, and add jumper ... check my earlier reply.
