How do I check my cylinder head for warpage?

I found a machine shop that can mill it down, but I don't want to take their advice on whether or not to get it milled because they of course are going to want me to pay them for a resurfacing!
They said it was $30 to get the head resurfaced.
The thing is, my car which I bought about a month ago has 156k miles on it and after taking the head off, it is obvious that it was taken apart before. One of the exhaust manifold bolts was broken of already, and I just have a feeling about that.
The gasket, which has the normal crack in the gasket between #1 cyl and the oil passage (lots of smoke in the exhaust) has NO scum on the water coolant passeges.
I'm just afraid that the head has already been milled once, so I don't want to screw up the compression with an unneccesary milling. Can I just put a straight edge on the head and eye ball it?
