The part about mixture and idle speed being separate issues still holds. The AMM set fuel based on airflow. The AIC controls idle speed by adding or subtracting air. With no AMM connected, the ECU will assume an airflow and schedule fuel. That should be a slightly rich mixture and a decent, but not great, idle. But if that mixture isn't quite right for your car, based on the state of its air leaks, goop in the throttle linkage, and just car-to-car variation, idle speed will be very sensative to small air flows. The AIC will try and set the idle speed, but if it's a little stick or old, or it just doesn't respond as fast as the engine, you'll get the yo-yo idle.
