1) Is there a DIY pressure test, I can buy?

No. It'll only tell you if you have a leak in the system.
3) If the Rad is clogged, how diffcult is the removal and replacement of the Rad? (I know I have to take off the hood, and I have the Bentley)
It's not all that bad to do. The most difficult thing is keeping the coolant from killing your lawn and contaminating the area you're working in. I pulled the radiator in my '88 900S without removing the hood, but pulling the hood is really easy.
4) Do I "have" to have a thermostat in FLA?
Yes. absolutely. It gets and keeps the engine in the proper operating temperature range.
While you have it drained and apart, replace the hoses if you don't know how long they've been on the car.
