Question: Changing Manual Transmission Fluid

After reading a lot of things on the BB I just wanted to see if I'll be doing this right when I get around to it this weekend.
My tasks:
1. Tighten nuts on power steering plumbing
2. Change Oil in Manual Gearbox
3. Refinish 2 hardwood floors (a bit off topic here)
So, This is my plan (if I can find a 12MM allen socket)
Put the car on ramps
Curse like a sailor breaking the 12MM Hex Transmission Drain plug free
Drain it (while the car is slightly warm, i guess it flows better)
Clean the magnetic drain plug
Make sure the threads are clean on gearbox and plug
Put the plug back in and torque to ???
Fill with 3qts 10W30
Recycle the Oil
Drink a beer
rinse, lather, repeat with 10W30 at 50-100 miles
rinse, lather, repeat with Honda MTF at another 100-500 miles
Is it a problem to drain while on ramps (and not flat)?
Should I do it with the engine cold or warm?
Does anyone have the torque spec for the drain plug? Either I'm blind (probably not), stupid (quite possible) or it's not in Bentley.
