Are you implying that rally drivers are old? :-)
Actually, with a Saab, in order to rotate the car quickly in a turn, you use your left foot on the brake and your right foot on the gas. This leaves you without a foot for the clutch. In old rally cars, the transmissions had helical cut gears just like street cars. These take a little more coordination to make a smooth shift but even un-smooth shifts work. With a modern rally car, the stock transmission is replaced with one have square cut gears. These are much noisier, but shift better without using the clutch. On a World Rally Car, the transmissions are semi-automatic just like those of an F1 car. Move the lever forward or backward and the car knows whether to up shift or down shift and does everything by itself.

PS: In general you are correct that brakes should be used for braking and transmissions for going. However, in daily driving you do need to occasionally down shift without comng to a complete stop.
