What color is it now? If I were you, I'd find a nice set of cloth rear seats that match your side panels (if your's are in bad condition ofcourse or you have leather) and invest in a nice pair of aftermarket front seats (cloth is alot cheaper). That would be eye catching and probly more comfortable. Dyes, paints and adhesives will smell wonders in your car, plus dyes aren't always effective, and it will be hard to get every little thing to match perfectly. Revinylizing the panels is very tough unless you know what type of vinyl to buy and have a refurnishing vacuumizer.
My opinion, don't get yourself involve w/ the hassle.
