Just because the engine thermostate is 82C or 88C and the fan thermoswitch is 75C does not mean the electric fan is running constantly. I have the 82C thermostat and the 75C thermoswitch and the electric fan doesn't come on in the winter for most purposes. The reason is because airflow through the radiator, other than at idle or in traffic, is sufficient to keep the coolant below the thermoswitch temp...and the thermostat keeps the engine at the proper temperature.
There IS an argument for minimizing temperature differentials across the radiator/engine; I've seen heavy duty diesel trucks with covers over 50-75% of the radiator grille front surface during the cooler months, but these trucks also have radiator outlet/inlet temperature gauges...they also generally use thermohydraulic clutches on the engine-driven fans. A lot of the problem is that coolant hits the cylinder wall bottoms first rather than the heads...for awhile Chevrolet/Corvette had some reverse coolant path engines going, but I understand they've gone back to the "normal" path.
