The biggest difference IMHO is the fuel system and wiring harness. The 8V requires removing ~6 fuel lines (banjo bolts) plus all four injector lines from the fuel distributor (keep some rags handy!). The wiring harness on the 8V snakes around from the drivers side, over the clutch cover and down to the starter motor area which is under the exhaust manifold and tricky to reach.
No difference in the tools needed: a hoist, jackstands, a-arm spacers and the infamous clutch spacer should be all you need. You should be able to do it with the 16V manual just substitute "remove fuel distributor" when it says to remove the airbox. Not a hard job (except for the @%*%#$% taper pin) just time-consuming.
The best advice I can give you is to label and document *everything* you do, wires, hoses, bolts... even the stuff that you think you will remember like the washer hose - just mark it, trust me you will thank yourself later when its reassembly time! I use tape, plastic zip-bags with labels, a clipboard for notes, and a digital camera. Taking pictures before starting has saved me several times. My SPG started on the first turn of the key last time I did this...
