Double clutching matches the engine speed to the transmission speed, so that the synchros don't have to do as much work when the gears are engaged. So, double clutching will save some synchro wear and tear.
There's really no need to double clutch when upshifting. The reason for doing it on downshifting is: when you lift off the gas pedal, the rpms naturally fall. But, when you shift to a lower gear, the rpms will rise (assuming the car's at about the same speed). So, shift into neutral, blip the gas to raise the rpms, and then shift into the lower gear. This way the engine and trannie are all at the same speed when engaging the gears.
When shifting to a higher gear, the rpms will fall (for the same car speed). Since the rpms fall when you lift your right foot to shift, the engine and trannie will be matched, rpm-wise. No need to double clutch.
When done right, you should feel no thump when coming off the clutch in gear. If the car speeds up, the engine was going faster than the trannie (ie, the engines speeds up the wheels). If the car slows down (eg engine braking), the trannie was spinning faster (ie the wheels spooled up the engine). In racing, when cornering hard, double clutching is done to minimized the disturbance to the vehicle's dynamics, since you're driving at the edge (not to mention some race cars don't have synchronized gears).
