What's the problem? If you're just trying to run higher boost, you should recalibrate it instead of removing it from the system. It's a safety feature that's there for a reason. The overboost switch is on the power to the fuel pump, hotwiring it as you suggusted would bypass it electrically just fine. Either the dash gauge or the APC transducer is attached to the second hose.
To recalibrate it, remove it and attach a pressure tester/gauge and set it to the desired pressure by adjusting the center screw until you hear it click off (multimeter could help). The only reason I say remove, is it's damn tight in there to get a screw driver in.
