The thermostat is a moving part, and it wears out over time. When thermostats fail, they can stick open (no heat/slow warmup), or stick closed. If it sticks closed, you can overheat and destroy the engine even on the coldest day.
I replace the thermostats in my cars every 2-3 years, at the same time I replace the coolant. Green and blue coolants only have a 2 year lifetime, after which most of the corrosion inhibitors are gone. If I get a car and don't know the last time the coolant or thermostat was changed, I assume the worst, and change it right away.
Other things that should be changed regularly:
Flush brake fluid every 2 years, three at most.
Change automatic tranny fluid every 20K miles, manual every 30K
