I wouldn't blame the AMM for noise. The K&N air filter may be the culprit. The failure mode of an AMM is poor idle, hesitation under acceleration, and running rich or lean. But extra noise isn't one of them.
The intake does make a lot of noise. I know that I've experience a lot of intake noise when going to free-flow air filters. But it makes sense to check all the hoses for leaks.
Since the car has a free-flow air filter, what other modifications have been made? Did the previous owner change the APC box, ECU, or change the Fuel Pressure regulator? That can adversely affect fuel economy at the benefit of performance.
Pull your spark plugs and look. Are they white (lean) light grey (about right) or fluffy black (rich)? I expect that if your gas mileage is poor, they would be fluffy black.
Check all the basics - look for vacuum leaks, make sure the timing is correct, the spark plugs are the right ones gapped to the right amount.
Running rich could be a few problems. It could be a leaky fuel pressure regulator (FPR). The previous owner could have adjusted the AMM to run rich. A bad O2 sensor can make the engine run rich, too. A lot depends on if something has failed, or it was a 'modification' by the previous owner. My guess would be that if someone added a free-flow air filter, they may have made some other changes.
