I would agree with RS that a used knuckle is a good idea. make sure it comes from the same year car, just in case there were changes that aren't noticiable by examination. Someone who knows these might tell you what range of cars.
As for the bearing, it is difficult to get them out without destroying them unless you have a hydraulic press and a press mandrel just the size of the outer race (like a dead outer race).
You will need a hefty set of smap-ring pliers, as you have to remove both rings, and the rear one is too far down in the bore to get it easily with screwdrivers.
You will know if your ball joints are bad by pulling and pushing on the stem after you've removed the knuckle. If there is more than just the *barest* of up and down movement, now is the time to replace them. Also, check hte steering tierod end, as you have to remove that as well and it is easy to get to now. Make sure you count the turns as you unscrew that tierod end so your alignment will go back nearly where it was.
On ball joints and tierod ends, uscrew the nut *entirely* before you knock the taper pin out of the joint. Then screw it loosely back on. If you ever break a taper joint open without having the nut entirely loose, you'll know why I say this :-)
When you reinstall your ball joints, grease the sides of the block and the interior of the two holes... makes it easier to put on and later, to take off again.
If you do the job yourself, sand the interior of the bearing bore in the knuckle well with 220 grit wet or dry, followed by 320 or 400; if you have a cyl hone of the right size, use that. Use Red Loctite on the OD of the bearing and install it from the outside with the inner snapring in place. Seat it well against the snapring. There are some more minor details about shimming the bearing against both snaprings, but it is not really necessary if you use Loctite.
Don't forget to put the spacers under the upper control arm before you try to remove the lower ball joint :-)
