The headlight switch and the seat heat switch both have replaceable bulbs inside. If it's just these that don't light, their bulbs must be burned out or the wiring isn't hooked up. The heater switch pulls out from dash. Carefully pry it out using two small screwdrivers on each side. Disassemble switch to find bulb.
You've already pulled headlight switch twice, so you know how it goes. Bulb pulls out back of it, but since you've replaced switch with no luck, I'd check for 12v to bulb. Power should be coming in on brown/white wire from rheostat. Also check for ground on black wire.
I hear the rheo knob is supposed to just pull straight off, exposing a slim nut you tighten up from front. My knob wouldn't budge and I could only tighten my rheostat only from the back when I had the knee bolster off.
