The other suggestions are good, but try this: Look at all of the rubber boots connecting the turbo ducting together - especially the ones connecting the turbo compressor discharge to the intercooler and the intercooler to the throttle body.
I think what's happening is that you reach a threshold pressure where a loose boot or split boot decides that it's going to release some of the "excess" pressure. Then the mixture goes waaaay rich, power (and boost) drop, mixture returns to normal, boost goes back up to the threshold, mixture goes waaay rich, etc., etc., etc.
Make sure that the clamps are tight. I had a problem with the inlet to the intercooler - the boot never fit on quite right.
If you still get the bucking after tightening the clamps, take the boots off and flex them to see whether there are cracks or splits in any of them. Cracks or splits can be subtle, so you'll have to look carefully. If you find a split boot, the only thing you can do is replace it.
