Can not go wrong changing the t-stat...the easiest thing to do...drain down the radiator via it drain plug..do not have to drain engine via its plug. You can see the water go down in the expansion tank...then remove the two 13 mm bolts....t-stat is just under that..just pull it out...you will need a new rubber gasket which sometimes does not come with all t-stats...the gasket is a type which fits around the outside rim of the t-stat....just slip the new stat in...I like to install it with the t-stat "bleed hole cock" facing forward which is the highest point on my engine...thus air will go throught the t-stat and you can vent it out by the bleeder nipple at the top of the housing cover....remount cover, pour your coolant back into the tank...do a preliminary air bleed out the housing nipple until you see water coming out...top off tank as the level goes down...keep the level in the tank above the bleeder nipple height...when car warms up and warm water is circulating through the t-stat (hose is hot) bleed it again while running to get additional air out of it due to air carry over during circulation.
