speaking as an operating engineer who works on really large [140'plus] private motor yachts.
If you wire the two batteries in Parallel[positive to positive and negative to negative] you will get 12 volts however if the batteries are not matched in terms of age,output and condition there is a chance that one battery will partially discharge the other. Generally speaking it is best to start with two fresh batteries and run them together.
The perko switch is really the way to go as you can run a deep cycle house battery and an engine starting battery. You'll also need a battery Isolator as well[keeps current from flowing between the batteries on the charging end of things] That way you have a separate battery to run the boat systems[stereo,lights, instruments,Microwave etc.] and when you are ready to start the engine you can switch the starting battery in to the system and away you go.[no more "oh s**t my battery is dead"]
Of couse if you have an outboard none of this applies and you should probably just get two matched batteries and run them in parallel.
