Well....
The Spedo is cable driven. It's held on with a spring clip. It's possible something snagged the cable and pulled it loose. Take out the speaker grill and look down in at the back of the speedo (through the windshield is easiest). Make sure it's plugged all the way on.
For the tach... if I remember right I think the wire harness runs through the firewall down near where the bolster bolts are. There's a connector there that could have been knocked loose when you were taking the bolts out. Other than that, there are 2 plugs on the instrument cluster... one on either side. I imagine something could have snagged a wire and pulled on the connector. You MIGHT be able to check those through the speaker grill also.
