Get a big screwdriver, put the handle against you ear and run the tip along the top of the valve cover when the engine is rattling. If the noise gets worse as you near the firewall, there is a good chance that the timing chain pad has hardened. This pad is located in the top of the valve cover and is easy to replace, just remove valve cover. When you replace this pad also check that your camshafts line up with the marks with the engine at top dead center. If marks line up, your timing chain has not stretched to the point that it needs replacement. Further checks on chain can be made by inspecting the chain tensioner to see how far it has extended, but this involves moving the A/C compressor out of the way. BTW, your shop should have checked the chain when the head gasket was redone. With any luck the pad will fix the problem.

Other causes could include stuck cam follower(s)(hydraulic lifter). Your home made stethoscope should be able to locate general area. These can be replaced, but cams must be removed. Still not too bad a job.
