I have removed the eng and trans from my 85 as one unit and separately, and in my opinion it is easier to take both out at the same time and then separate them. There is not a lot of room to separate the two in the engine compartment which makes it hard to get some (at least one is especially stubborn) bolts between the trans and engine block out. It was one of the ones near the back of the engine. It is actually a bolt with a nut instead of a bolt fed into the engine block. That had me stumped for a couple hours, because it would turn but not loosen. Also, once the engine is removed from the trans, it is still a bitch to get it out of the engine bay. It looks like it should just pop up and out, but it takes a lot more space than I had and I ended up taking out the radiator and everything else in front of it to get the engine out.
To put it simply, trying to take out the engine without the trans is possible, but it causes more problems than it solves. And with both sets outside the cars, you can easily remove and switch transmissions. I'm not sure how hard it is to put the manual back in, but I would definitely suggest taking them out together.
