well Adam I am no expert but I also have an 87T and had a similar problem.
In my case, I replaced the line from the clutch master cylinder, then bled the system (procedure using bicycle tube to supply pressure, research old posts to find how), and also rebuilt my mstr. cylinder with new rubber parts.
My clutch still engages closer to floor than I like, but it is the same for all gears. I think my master is too worn and has lost motion before it builds any pressure to go to the slave.
If yours is changing while you drive, I am guessing you might have never gotten it bled out correctly. It should engage the same at the clutch, since the clutch sees nothing different between any gears. I would check and see what parts were replaced with your clutch job; make sure the slave cylinder was included.
