I'd replace fan switch on radiator with a good one to see if that solves the problem. if the fans just come on late, your relays should be OK.

If you're handy enough to replace the thermostat, you can do the clutch master yourself in an hour first time. I would not bother with a rebuild kit because sobstory has cylinders for a good price. Just unhook connection to pedal, clamp off fluid hose, disconnect pressure line at master, unbolt 2 bolts holding master at firewall. Installation is reverse and then bleed with pressure bleeder. You can make a pressure bleeder yourself out of an old bike tube. cut the tube about 3 inches on either side of valve, seal one open end with 2 popsicle sticks and a small c-clamp and fasten the other end over resevoir with a hose clamp. Pump up to about 10psi with a bike pump, open bleeder screw at slave until fluid runs clear. You'll save over $100. While $200 is not an outrageous price for a shop, if the shop were to do the job for $150 including parts and labor, I would probably have the shop do it. For $200, try to get them to pressure flush your brakes at the same time.
