Alignment & a 'straight' steering wheel are very much connected to each other...
When you replace ball joints you should have the suspension aligned. Pulling to one side means caster and/or camber are off. Of course, the road has to be level when you check this. If toe is off tires will wear badly. If caster or camber are off BY THE SAME AMOUNT on both sides, then it won't pull, but its still incorrect.
If the alignment is done properly, the steering wheel will be centered when you drive, and (this is important) the extreme R & L steering should be the same. In other words, at full-lock one direction should be the same angle (opposite direction) as the other direction.
