I'll second this emotion. I always leave the brake on, just because it's an added measure of safety. Someone crawling around inside the car could bump the gearshift or it could slip out of gear. I think, though I may be wrong, using the gearbox to hold the car in place probably loads bearings in there in a direction they aren't designed to be loaded, and over time that could cause or exacerbate problems. This is also true in an automatic, where leaving the car in park but without a brake loads up the clampy things and eventually causes them to get sloppy, as the car rocks back and forth every-so-slightly as cars pass by or the wind blows.
I go nuts with the handbrake, thanks to my dad, and even apply it at stoplights. In the event I am rearended and my foot slips off the brake, the parking brake is some added safety to help prevent me from slamming into the car in front of me, or being shot out into cross traffic.
I'm pretty sure wear and stretch on the cables is negligible. I've never had to replace handbrake cables, even on older cars like my '78 99 or '80 900T. 20 years of service seems pretty good to me, although of course previous owners may not have been so liberal with its application... :)
Um, the only time I would NOT use the handbrake is in freezing temps where the car is wet or remains outside. In these circumstances, it's probably a better idea not to risk a frozen caliper in the event you need the car and don't have time to thaw... Fortunately, around here, that's not even a concern.
