The alternator has 2 redundant belts, like you guessed. From crank pulley at the bottom, waterpump, then alternator. But I wouldn't keep driving with only one installed. Besides, some leftover piece of the broken belt is bound to get in & derail another belt.
Since you don't have a turbo, there's enough room to stand on the 'frame' rails next to the battery. Sort of kneel on the valve cover. That makes it easier.
The belts aren't that hard to do on the backwards engine, but skinny hands help. AC idler pulley is on a pivoting bracket, pull that belt off.
Alternator pivots on its lower mount, I usually remove the upper bolt (at the adjustment). That allows the alternator to swing a bit closer to the engine to make it easier to get the belts on. I'd get both new belts so they match better. See if you can pick 2 belts from the same batch so they match closely.
While you're in there, you may as well get all 4 new belts. PS pump itself pivots on its bracket.
While you're wrestling with the alternator, don't push too hard on the heater hoses. The plastic hose nipples which come through the firewall can break. Then you get to see how much room there is to work under the dashboard...
