The high-temperature cutout for the AC is in the middle of the upper radiator hose. If you can get the compressor to engage by jumpering that switch, then replace the switch. I'll assume you can watch the temperature gauge so you're not really overheating.
Otherwise, there is a low-pressure switch at the receiver/dryer; between the RH turnsignal & the washer bottle. It keeps it from running if your refregerant has leaked out. If you can get the AC to engage by jumpering that switch (only run it for a moment); then check for leaks, & recharge it.
