Don't know exact capacity, but this isn't a precision operation. You don't need to know because the best way to refill is by premixing your coolant to 50% concentration with distilled water. Then you just fill it up.
Probably 90% of all coolant is simply dumped on the ground or poured down the drain, which doesn't make it right. Your local recycling station/town dump might take it(mine does) or Pep Boys or a local garage might take it from you. To drain, I use the same 5 gallon jerry can with a side bung that I use for oil (with no oil in it!), but a two gallon bucket should be OK. I'd guess that 60%-70% comes out the radiator spigot and 30%-40% comes out the block drain.
When you flush, 99% of the antifreeeze will be out of the car so don't bother with catching the water, just let it run on the ground. Remove the thermostat so water will flow freely at ambient temperature. Also leave heat temp setting on full hot.
I pull a heater hose and flush through the hose and let the water run out the heater port. Also flush through the expansion tank. Flushing might take you awhile if your system was neglected (15-30+ minutes depending). Might consider cleaning out your expansion tank with a bottle brush and a strong household cleaner, looks much nicer when it's clean. When the water runs out clear, put everything back together and fill it up with the pre-mixed 50/50 solution. Run engine with heat on full and keep level in expansion tank full. Bleed at thermostat after the engine is hot and the fan(s) have cycled.
