As JimBlake & speegee says, it's not good.

With the O2 sensor disconnected, the engine control will run the engine rich as a safety measure. This will make for poor gas mileage. As to harming the engine, yes, running rich can overheat the catalytic converter, but that usually happens with REALLY rich, like a spark plug not firing and you're pouring 1/4 of the fuel unburned into the cat. But that doesn't mean you can't cook your cat.

The over-rich mixture will wash oil from the cylinder walls, promoting wear. The rich mixture will foul the spark plugs and produce carbon buildup on the valves and piston crowns.

Would it be OK for a day or three? Yes, probably. But I would fix it ASAP- the car was designed to work with an O2 sensor. In markets where there is no O2 sensor, the engine control is modified to control fuel flow differently. They just don't leave the wire to dangle.

No, the engine won't explode. It will run poorly and be damaged over time.
