Same car, same trouble. If I remember, yours has 88k miles on.
First you need to rule out the obvious: coolant leaks (is there coolant in your system)/ pressure leaks (my tank was cracked)/ bad coolant circulation (kinks on hoses) /fans working...
If all this is OK, you can think of the radiator. It's not very expensive and easy to DIY. I changed mine 2 weeks ago, almost certain it was bad with the same symptoms as yours. I discovered it was actually still in very good shape.
Since I was in the engine with both hands, and not willing to do it too often, I also changed a few hoses, and put in a low temp T-stat, low temp T-switch and did the electrical modif to get both fans to kick in, even when the A/C isn't on (get the details on Tom Townsend's website).
Ever since, my gauge has never read higher than half, even stuck in the traffic after a 6h run on the highway with a 80 F exterior temp.
So all that does work...
My $.02 advice: do the fan modif and see (it's 1/2h work and real easy)
