You've already bypassed the switch - tying the wires together takes it out of the circuit. There's nothing more you can do to it now.
Fuel cut-off is pretty abrupt - the engine just stops. Under full boost, this will toss you towards the windshield. If you've got the cut-off switch wired out, I suspect that you aren't getting quite as abrupt a cutoff.
I'll assume you still have the APC system wired in. You might be feeling the result of the APC kicking in, probably due to knock. Get enough boost, and you'll knock. Until the fuel system has been modified, you won't be able to deliver enough fuel at very high airflow, so you'll run lean, and lean running causes knock. So I'm going to assume that you've reached knock, and the APC is cutting you back. But since the APC isn't designed to work smoothly at Way Into The Red levels, you get a jerkiness at full (or more than full) boost.
If the APC has been wired out, then you're probably well into knock. Knock is a lot less efficient than normal combustion, so power will drop off quickly.
