To grind valves or not to grind valves ??

In Bentley and most places, they say not to cut or grind Saab turbo valves because you will remove Sterllite coating and make them useless, but a machine shop that does all of the local Saab dealer work says that they always grind the valves.
What's the deal? I want to get a valve job done. Can I have just the seats cut and then lightly lap the valves after, should I have both the seats and valves cut?
