I started searching for an old post of mine but it must be back a ways...

The steering rack provides the limit to steering travel, so you can't just take off the wheel & center it.

Lift the front wheels off the ground so you can spin the steering. Make sure the steering wheel turns exactly the same amount to both sides. Full lock, it should sit at the same angle, opposite direction. If not, take off the steering wheel & 'make it so'.

Then you center the wheel by lengthening one tie-rod end & shortening the other the same amount. Trial & error, drive around the block to check? Its not a bad idea to get an alignment afterwards, to make sure you haven't messed up the toe.

One thing that happens is that if the alignment shop doesn't know any better, they'll adjust toe only at one side. Then they'll pull the steering wheel & center it. The result is that one direction or the other, the steering can go 'too far'. Maybe you can pull a brake hose apart or bend a CV joint too far.
