First, make sure your battery idiot light comes on when you turn the key on, before you start the engine. The excitation current comes thru that bulb. If that bulb's burned out or the little green wire's loose; the alternator won't charge.
Make sure the black (or bare braided?) ground wire from the alternator frame to the block is attached. That's a popular thing to come loose or fall off.
Next, are you sure the stereo isn't using any power when you think everything's turned off? Try actually disconnecting all its power connections for a few days to prove it. I suspect you've got an electrical load that's not getting turned off. Maybe a lamp somewhere or a window switch that's stuck?
Voltage regulator is solid-state, mounted in the back of the alternator housing. You can remove it with a couple screws without removing the alternator. The oil filter makes it a bit of a challenge, tho...
Some folks with killer stereos have put in alternators from early '90s Saab 9000s. I don't remember which years, but all you have to do is swap the pulley & you get over 100amps.
