idle question...longish...

Well, the SPG has been running fairly maintenance free lately, but I think the time has come to put some work into it. And I figure what better time than right before a road trip.
First problem is that it idles strangly. Sometimes it idles right at 850, rock steady. Other times it's up around 1000 or above. Still other times the idle will bounce slightly, or even just rise continually till I shut off the car. This makes me think that the AMM or related software is at fault. I checked and adjusted the mechanical idle control, and the dashpot, but it's hard to do so with the idle jumping around so much. Also, when idling high, I tap the AIC valve to see if it's sticking, but nothing. I've also cleaned that valve twice to no avail. I will try and replace the AMM soon, but won't be able to do so before the trip this Friday, so does anyone think that the idle problem could be indicative of a larger problem? Also, the car tends to smoke slightly (whitish) when cold or warming up. I'd like to think that it's not the head gasket, but who knows. It still drives great and seems to have decent compression for having over 320,000 miles.
I really appreciate any and all suggestions and thank you in advance for helping me out.
