Hesitation could be due to partially clogged injectors. Get yourself a bottle of Chevron's Techron (preferrable the 20 oz. bottle), pour it in at a gas station, then fill the tank. Ideally, you should run the car until the tank is nearly empty, but, letting it empty too much in winter could cause condensation in your tank which could also be a contributor to the problem. Plus, the in-tank pre-pump is cooled by the gasoline's temperature, so, don't go below the 1/4 tank level. I plan the use of Techron just before an oil change. Why have the carbon deposits from the valves constantly circulating in the oil when I can drain them with the oil? I do it twice each year.
Overheating could be caused by air pockets in the coolant system. Open the bleeder valve in the thermostat housing (you'll need 2 11mm wrenches here) and slowly begin to fill the expansion tank. You will have your temperature control turned to hot while you do this. Watch for coolant to begin trickling out of the bleeder valve. Run the car and recheck the valve again when cool.
If this is not it, then the previous post regarding the fans thermostat switch could be the cause (an easy test as was pointed out), or the water pump, the radiator, or thermostat. The thermostat uses wax that does wear out over time, but, better to get a Saab part instead of a generic one.
