If you check the oil immediately after shutting off the engine, it might register low on the dipstick until the oil drains down from the head, especially if your actual oil level is towards the MIN line. When it was "fine" the next day, was that at the MAX line, the MIN line, or somewhere in the middle? Did you wait a little longer to check it after engine shutdown than you did the day before?
Although you say it doesn't consume oil, you should check the oil level routinely. It doesn't hurt to check it. Oil loss is really only possible by either external leakage or internal consumption. The other possibility is that it was not properly filled at the last oil change. An in dash oil pressure gauge might be useful if you suspect that there is a lack of pressure issue...the idiot light *should* come on at about 7 psi *if* it is working properly...
