new exhaust valve appearance

I'm in the process of porting and polishing an 86 8V cylinder head. Along with that is the cleanup of the valves, which have been removed. The intake valves are the easiest to determine what they should look like - as clean as possible, with a nice buffed metal surface all around. The exhaust valves are a mystery however. Someone, if you would, please describe the appearance of a new exhaust valve? The sodium filled 8V version. Is the face a smooth metal surface, or is there some sort of textured coating? All of them have a thin brownish textured coating of some sort over the entire face surface, but one is beginning to peel and flake, revealing a brownish polished metal surface. It almost looks like a layer of carbon, but not quite. Describe the color as well. Instinct tells me it's just carbon, but at the same time I don't want to sand away something that should be there. Also, on the backside stem which is directly exposed to the exhaust gasses, is there supposed to be any light brownish coating along that stem as well? Again, it could just be carbon, but if so it's not the same black stuff that collects around the stem nearest the valve stem guide. Should that valve stem area be a clean polished metal like the intake valve stem? TIA
