where are you mounting the gauges? if they are in the lower or upper DIN slot, it's easiest to just grab switched +12V from something like the cigarette lighter in the center of the dash by using a splice connector...
(2) yes, you can crimp or solder the A/F signal wire at the small rubber boot connector just behind the PS reservior--- just be really careful not to accidently ground the connector (will damage the O2 sensor);
(3) water temp--- yes, that is the thermocouple which you have to stick into the coolant (preferably in the block) somewhere. Depending on what the thread is, you will likely have to get a bushing adapter so you can put the thing into a pretapped hole on the engine. I'm assuming you still want to keep your dash temp gauge working. Depending on the year of your Saab, that could either be real easy or require drilling & tapping...
